12 ripe Peaches
Juice of one Lemon
1 teaspoon sugar

Slice an X on the tip end of each peach. Fill a sauce pan with water and bring to a rolling boil on high. In batches, place peaches in boiling water for 15 seconds. Remove from water and place in an ice bath to stop the cooking process. In a two quart plastic or glass bowl, add the juice of one lemon and 1 teaspoon of sugar. One at a time, peel peaches and slice into eight wedges. Add the peach wedges to the lemon mixture and toss well. Repeat with the remaining peaches. Place half of the peaches into 2 one quart zip lock bags. Seal and freeze bags on their sides. Thaw, toss with sugar, and serve.
