½ Cup Onion (diced)
4 Cloves Garlic (minced)
3 Serrano Peppers (diced)
3 Jalapeño Peppers (diced)
2 Tablespoons Butter
2 Tablespoons Flour
1 Cup Milk
6 Cups Shredded Cheese, can use any combination of Longhorn Cheddar and Monterrey Jack.
½ Cup Cilantro (chopped)
2 Plum Tomatoes (peeled, diced)
½ Cup Sour Cream
Salt to taste

Directions:
Directions:
1. Melt butter in saucepan on med-low heat. Add onions and peppers.
2. Cook 5 minutes or until onions are translucent.
3. Add garlic. Cook for another minute.
4. Whisk flour into mixture. Cook 30 seconds.
5. Add milk. Cook on medium, whisking constantly until sauce is thick- about 5 minutes.
6. Stir in cilantro and tomatoes.
7. Turn heat to low.
8. Add cheese ¼ cup at a time, stirring after each addition until fully melted.
9. Stir in sour cream.
10. Salt to taste.
