1 Cup Sugar
1 Cup Milk
4 Cups Flour approximate to make a soft dough
3 Eggs
3 tsp.Baking Powder
nutmeg
Salt to Taste
2 Tbsp Hot Lard

Directions:
Directions:
Stir the sugar and milk together until the sugar is dissolved; add the beaten yolks of the eggs, salt, nutmeg, then about half the flour, stirring the mixture perfectly smooth. Now add two tablespoonfuls of hot lard from you kettle on the stove, beating it in quickly and perfectly before putting in the whites of the eggs (beaten stiff) and the balance of the flour in which baking powder was mixed.

Use only enough flour to make a soft dough, just so you can roll it out a small portion at a time. Cut dough into doughnut shapes.

Fry in very hot lard and take out on brown paper, laying them separately. Never pile them till all are done. When done, take a dish of fine white sugar, begin with the coldest ones and roll each separately in it. This will make about 50 doughnuts.
