1/2 cup water
2 tablespoons olive oil
3 garlic cloves, sliced
1 shallot, sliced thin
1 pinch crushed red pepper flakes
1 1/2 tablespoons tomato paste
1 medium head cauliflower, cut into florets
2 tablespoons coarsely chipped flat leaf parsley
Salt and Pepper

- Heat oil in a large skillet over medium heat. Add garlic and shallot to the pan, and cook until they soften, 2 to 3 minutes.
Add the pepper flakes and cook a few seconds longer, then stir in the tomato paste.

- Tumble in the cauliflower, stirring to coat the florets with the sauce. Add 1/2 cup water, cover and simmer, stirring occasionally, until the cauliflower is just tender, 7 to 8 minutes.

- Stir in the parsley and season to taste.
