4½ Cups Cornmeal (yellow and white mixed)
1 Cup Flour
¼ Cup Sugar
3½ Teaspoons Baking Powder
1¾ Teaspoons Baking Soda
2 Teaspoons Garlic Powder
¾ Cup Onion (minced)
2 Tablespoons Chives (minced)
2¾ Cups Buttermilk
3 Eggs

1. Mix in order as given above. Beat eggs slightly and mix with part of buttermilk before adding.

Hush puppies are best fried in grease that has been used for frying fish beforehand.
Chives can be substituted with tender onion tops or shallots.
