4 slices of bacon
1 cup onion, chopped
1 clove garlic, minced or pressed
1 (15oz.) cans of pinto beans
1/2 cup water
1/4 cup tomato ketchup
1/4 cup molasses
1 tbsp. Dijon-style mustard
1/2 tsp. powdered ginger
1/2 tsp. salt
1/4 tsp. black pepper

Directions:
Directions:
Slice bacon into 1/2 inch strips. Saute bacon, onion and garlic for 5 minutes, stirring occasionally. Drain beans. Combine beans, onion mixture, water, ketchup, molasses, ginger, salt and pepper in 1- quart casserole dish. Bake, covered, at 350 degrees for 30 minutes. Uncover. Bake 30 minutes longer.
