4 c. milk
1 c. sugar (scant)
1/4 lb. butter
1 pkg. yeast
1/2 c. water
8-10 c. flour
1 tsp. baking soda
1 tsp. baking powder (heaping)

Directions:
Directions:
Scald milk, 1 scant c. sugar and butter and let cool to lukewarm. Dissolve 1 pkg. yeast in 1/2c. lukewarm water, to which you've added 1/2 tsp. sugar. Add yeast and 4 c. sifted flour to scalded, cooled mixture. Allow this sponge to rise until double in bulk. Sift together 4 c. flour, 1 tsp. baking soda, 1 heaping tsp. baking powder and 1 tbsp. salt. Stir into sponge mixture. Mix until not sticky (you may need to add up to 1 1/2 c. more flour).

Place in refrigerator or in cook place to rise. Work down and use as needed. Roll out on floured board and fry in hot grease. This dough can also be frozen and used as needed.
