3-4 Tbsp butter
1 medium onion, chopped
1 box chopped mushrooms (˝ - žlbs)
2-2˝ cups chicken stock
˝ cup cream
1-2 Tbsp flour (to thicken)

Directions:
Directions:
1. Melt the butter.
2. Add the onions and almost all the mushrooms and cook on low heat until tender, about 10 minutes.
3. Sprinkle flour into the mixture and cook until the the butter is absorbed.
4. Add the chicken stock slowly, heat and stir until it boils.
5. Reduce heat and simmer for 20 minutes.
6. Cool.
7. In the blender, blend in the cream and then heat slowly.
8. Save 1/4 lb mushrooms and add to blended soup.... I think this means raw chopped mushrooms that you add at the end for more of a bulkier mushroom chunk after you've blended the soup.
9. Can add a small amount of sherry (2-3 Tbsp) for flavor if you want.

Unsure of how much this makes. Got this recipe from Mom and Dad but haven't made it in a while. So tasty!!
