8 oz Farfalle Pasta
1/2 Cup sun dried julienne cut tomatoes with herbs- reserve 3T of oil
1 lb asparagus trimmed and cut to 1" pieces
8 oz mushrooms-sliced
2 cloves garlic, minced
2 T lemon Juice
1/4 t salt
1/4 t pepper
1/4 C parmesan cheese
1/2 c walnuts-toasted
1/2-3/4 lb bacon
red onion or shallot

Cook pasta as directed

Cook bacon and reserve 1T of the fat. Mix with the sun dried tomato oil and cook onions. Add asparagus. Add mushrooms and garlic. Cook about 6-8 min. Stir in lemon juice, salt, pepper and sun dried tomatoes. Toss with cooked pasta. Sprinkle cheese and toasted walnuts on top.
