Ingredients:  
1 - 10 ounce package of thin noodles
1 tablespoon butter
1 green pepper chopped
1 small onion chopped
1/4 cup fresh parsley
2 cups cubed ham
2 large eggs
3 cups milk
1 cup sour cream
1/2 teaspoon salt
Dash of black pepper
1 cup Buttered bread or cracker crumbs

Directions:
Directions:
1. Lightly butter 8x12 baking dish
2. Add package of uncooked noddles into baking dish
3. Saute butter, pepper, onion and parsley until onion is cooked but not brown
4. Add the ham and stir until warm
5. Pour ham mixture on top of noodles
6. Combine eggs, milk, sour cream, salt and pepper stirring until combined
7. Pour over ham mixture in baking dish
8. Top with buttered bread or cracker crumbs
9. Cover loosely with foil.
10. Bake for 30 minutes at 350º
11. Remove foil and bake another 20 to 30 minutes longer until browned
