2 1/2 cups Bread Flour
1 cup + 3 Tbsp Warm Water
1/2 teaspoon Yeast
1 1/2 teaspoon Kosher Salt

Pizza:
1 1/2 cup Pizza Sauce, divided
4 Tbsp Peanut Oil or Canola Oil, divided
2 cups Mozzarella Cheese, divided
One 6 ounce jar Sliced Mushrooms or alternatively one cup sliced pepperoni
Two Tbsp chopped fresh basil if desired

Begin 36 hours ahead.

Combine bread flour and yeast in a medium bowl. Add warm water and kosher salt, and stir until all dry ingredients are incorporated. Cover lightly and allow to rise for 8 hours.

Place 2 Tbsp of oil into two iron skillets and tilt to coat. Coat hands with oil and divide dough into two pieces. Turn each piece of dough folding edges under and turning 1/4 turn until a smooth disc forms. Place the smooth side down to coat with oil, and then turn over to coat the other side. Flatten out dough to spread out in skillet.The dough will not reach the edges. Repeat with the second skillet. Cover with saran wrap and allow to rise undisturbed for 24 hours.The dough will rise and spread out to the edges of the skillets.

Uncover skillets. Preheat oven to 550 Fº.

Place 3/4 cup of pizza sauce on each pizza dough crust and brush to cover the dough all the way to the edges. Sprinkle each pizza with 1 cup of grated mozzarella. Sprinkle each pizza with drained mushrooms, or alternatively pepperoni if desired.

Bake 12 - 15 minutes. Top with fresh chopped basil if desired. Serve hot with extra sauce and fresh grated Parmesan cheese.

This deep dish pizza is absolutely excellent. It is as good as Pizzaria Uno in Chicago or M.J. Pippins in Atlanta. My family loves it, and it is even delicious and crispy served cold.
