4 potatoes (evenly sized)
1 tsp salt
4 - 6 Tbsp melted butter
4 Tbsp grated cheddar cheese
1½ grated Parmesan cheese
2 -3 Tbsp chopped fresh herbs
(such as chives,parsley,sage or thyme)

Directions:
Directions:
Scrub and rinse potatoes
Cut potatoes into thin slices (DO NOT CUT ALL THE WAY THROUGH)
Place in baking dish
Sprinkle with salt
Coat potatoes with melted butter and herbs
Bake at 425º for about 50 min
Sprinkle with cheeses and bake additional 10 min to lightly brown and melt cheeses

Recipe can be adjusted to use microwave. Follow basic directions to cook fOR 5 MIN followed by
5 min rest period then cook another 6 - 8 min to melt cheese.Check that potatoes are soft. salt
