1/4 c. rice per person
Chicken broth
Olive oil
Salt
2 cloves garlic
Fried tomato
Paprika
Some saffron infused in 3 T. of cold water.
Meat: chicken or shrimp
½ onion, finely chopped
1 green pepper, chopped
Any other vegetables to taste

Put saffron in small bowl with cold water for at least an hour before starting recipe. In a frying pan, heat the olive oil. Fry the garlic cloves with skin to prevent burning inside and not giving aroma of burning oil. Brown the chicken or meat to taste with a little salt and remove. Then, lower the heat to medium and fry the vegetables. Begin with the vegetables having less water, approximately two-minute intervals between them and in any case always onion last.
Once poached, make a "volcano" with the vegetables and in the resulting space, add a little oil and fry the paprika with extreme caution not to burn because it will become embittered and would be impossible to eat.
At the time it is dark and smells, quickly add the tomato to stop cooking, mix in everything, vegetables and meats chosen.
Saute and add the rice to make it all imbued with the sauce and then add the hot broth. Add the saffron water mixture. Bring to a boil and salt. Boil for 10 minutes and then lower the temperature and cook another 10 minutes.
