6 medium potatoes
1 onion
6 eggs

Directions:
Directions:
Peel the potatoes, clean and dry with paper and cut them into thin slices. Peel and cut the onions into strips.
Simmer the potatoes in olive oil along with onions until they are soft. Drain and reserve. Beat the eggs in a bowl, mix with the potatoes and onions and add salt to taste. Heat a bit of olive oil and cook the mix on both sides until it thickens. It has to be golden brown and squishy inside.
