Maple Bourbon Salmon Recipe

1 lb salmon with skin
2/3 c maple syrup
1/3 c bourbon
1/4 c orange juice
1/4 c soy sauce
3 cloves garlic, minced
1/4 t cayenne pepper (opt.)
salt and pepper to taste
2 T olive oil

Directions:
Directions:
Preheat oven to 400º.

In a med bowl, combine maple syrup, boubon, OJ, soy sauce, garlic, cayenne, salt and pepper.

Place salmon in a shallow baking dish. Add liquid mixture to dish, submerging fillet. Refrigerate and marinate x 30 min.

Drain most of marinade from dish and reserve. Bake salmon 10-15 min (adjust according to thickness of fillet and desired doneness.)

While salmon cooks, pour marinade into sauce pan. Bring to a boil, then reduce to low and let simmer until liquid thickens into glaze-like consistency, about 10 min.

Serve immediately.
