2 # ground beef
1 onion, thinly sliced
1 # favorite potato, maybe be sweet potato
3 med. tomatoes, thinly sliced
2 c zucchini, thinly sliced
1 bunch fresh basil, roughly chopped
7 cloves garlic, minced into paste
3 T tomato paste
1 T olive oil
2 t salt
pepper to taste

In a 6-qt. slow cooker, add in ground beef, tomato paste, garlic 1 1/2 t salt and pepper. Mix well so that tomato paste is fully incorporated into the meat. Even out the top.

Layer by layer: Top with onions, then tomato, then basil. Layer on potato, then zucchini. Sprinkle remaining salt & pepper.
Drizzle olive oil on top. Cook on high for 3 hours.

Remove pot from base. Allow to cool with lid partially open 5-10 min. and serve.
