2 Cups Flour
2-3 Ripe Bananas
1 Cup Brown Sugar or (½ brown & ½ white)
½ Cup Butter
2 Eggs
1 Tsp. Baking Soda
1 Tsp. Baking Powder
2 Tbsp. Milk
¾ Tsp. Salt
1 Tsp. Cinnamon
¾ Cup Grated Carrots
½ Cup Chopped Nuts
½ Cup Raisins
½ Cup Dried Cranberries
½ Cup Applesauce or Diced Apples
1 Tsp. Orange Zest

Lightly grease loaf pan. Mix flour, baking powder, salt, and baking soda. In separate mixing bowl, cream butter and sugar. Add eggs and orange zest - Beat well. In small bowl mash bananas & stir in milk. Alternatively add flour mixture to creamed mixture.Beat until smooth and add rest of the ingredients. Pour into pan and bake at 350º for 45-50 minutes or until toothpick inserted in center is clean.
