2 lbs. chicken tenders (about 12)
Salt, for seasoning chicken + ½ to 1 tsp. for sauce
Pepper, to taste
2 T. olive oil
3 T. butter
8 oz. sliced mushrooms
2 shallots - peeled and sliced
¼ c. sliced green onions (reserve tops for garnish)
3 T. flour
2 c. milk
¼ c. Parmesan cheese + more for garnish
2 T. (oil packed) sun-dried tomatoes, thinly sliced
Cooked, buttered angel hair pasta or fresh spinach for serving

Sprinkle chicken lightly with salt and black pepper. In a large skillet, heat olive oil over medium heat. Add chicken and sauté until lightly browned and thoroughly cooked - about 5 minutes. Remove chicken from pan and keep warm.

Melt butter in the same pan and sauté mushrooms, shallots, and green onions until just tender; 1-2 minutes. Add flour and the ½ to 1 tsp. remaining salt. Then, whisk in milk and stir constantly until sauce thickens. Stir in Parmesan cheese and sun-dried tomatoes. Arrange chicken over buttered angel hair pasta, cooked according to package directions, or on a bed of fresh spinach. Top with sauce and garnish with more Parmesan cheese and green onion tops.
