1¾ cups whole wheat pastry flour (or gluten free)
¼ Amaranth flour (only if you have it)
2 tspn. baking powder
1 tsp. ground cinnamon
¼ tsp. salt
1 cup unsweetened non dairy milk
¼ c. unsweetened apple sauce
1 tsp. pure vanilla extract
1¼ c. frozen /fresh blueberries

Directions:

Mix dry ingredients, then combine wet set batter aside for 10 min and put on nonstick skillet add blueberries either to batter or on top before flipping pancake.
