2 eggs
1 c. sugar
¾ stick butter, softened
1 small can (8oz.) crushed pineapple, drained
1½ c. coconut

Directions:

Mix all together well and pour into unbaked pie shell.
Bake @ 375º for 30 minutes.

I put foil around the edge of crust to prevent burning. The pie is done when the center puffs up and coconut is beginning to brown. It is a rather thin pie, perfect for a lite dessert.
This pie was brought to our house by a sweet little lady when our mother had passed away. Both Carol and I have taken it to pot-luck dinners and the pans are always emptied.
