Baked Chicken Breasts Recipe

Chicken breasts - pounded out to a uniform thickness
1 qt warm water - not hot
1/4 cp salt
2 Tbls butter or olive oil
Preferred Seasonings to taste
Salt & Pepper to taste

In a large bowl put enough warm water to cover the chicken pieces. Add the salt and stir to dissolve the salt. Place the chicken in the bowl, it should all be covered with water. Leave at least 30 min on the counter. Could be left in the fridge up to about 6 hrs. Remove from the brine and rinse with cold water. Pat dry and set aside.

Spray your baking dish with cooking spray. Brush both sides of each chicken piece with your choice of butter or olive oil and place in the baking dish meaty side up. It's better if you don't overcrowd them. Sprinkle with whatever seasonings you prefer using as much as you like. I recommend about 1/2 tsp per chicken breast plus salt and pepper.

Roast uncovered in pre-heated oven *450 for 15-20 min or until the internal temp is at least 160*F. Remove the pan from the oven and let it sit for 5-10 min so the meat can rest before you cut into it. This is a very important step! Cutting into the chicken will release the juices and dry out the meat.
