1 1/2 c. flour
1/2 tsp. salt
2/3 c. shortening
ice water

Preheat oven to 450º

Use a 10" pie pan

Add 1/3 c. of the shortening to flour mixture. Add 1/2 tsp. of salt
Beat on #2 speed until mixture is fine (about 2 minutes). Scrap bowl while beating.
Add remaining 1/3 c.shortening.
Beat only until shortening is in larger particles (about 1 minute)

Don't overbeat!

Gradually add about 1/3 ice water to mixture. Beat slowly about 1 minute.

Roll on lightly floured board. Put in pie pan and fluke the edges of dough with your fingers on the edge of the pie.

Bake for about 10 minutes or until golden brown.

Cook crust before adding filling.

My good friend Karen Rose gave this recipe to me in the late 1970's. Didn't use it until maybe 20yrs later. People that ate my pies ALWAYS said this is the best pie crust I ever had. No doubt the recipe is from Karen.
