1 lb. red or yukon gold potatoes - skins on

DRESSING:
2 Lemons, juiced
2 Tbs. thyme
⅓ Cup flat leaf parsley, chopped
1 clove garlic, minced
2 Tbs. extra virgin olive oil
Salt/Pepper to taste

Boil potatoes with skins on till almost done. Grease a cooking sheet and lay potatoes on sheet. Using a large fork or the back of a spoon (may use the palm of your hand if the potatoes are not hot!). Sprinkle with dressing and bake at 425º for about 30 minutes or until a little crispy.

DRESSING:

Juice the lemons into a medium bowl. Add the oil and chopped thyme, parsley and garlic. Add salt and fresh ground pepper to taste.

I use chicken base instead of salt. Adds flavor! You may want to increase the garlic to your taste.
