4-6 pieces Cod or Red Snapper
8 oz. pancetta-cubed
2 Lemons zested
2 Tbs thyme
2 Tbs Fennel fronds
2 Fennel bulbs
½ cup white wine

Directions:
Directions:
1.Fry pancetta till crisp. Zest 2 lemons, then slice to put on top of fish.
2. Make a rub with the lemon zest, 2Tbs of thyme, 2Tbs of fennel fronds. Slice fennel bulbs thinly.
3. Line a cooking sheet with foil and spray with cooking spray. Lay fish out on sheet, add rub to fish, layer the sliced lemon and fennel bulb on top of fish. Sprinkle the white wine and pancetta over fish. Cover with foil and bake at 375º until fish is flaky.
