16 oz. can spicy refried beans
10 fajita-sized flour tortillas
½ c. chopped scallions
1½ c. finely sliced spinach leaves
1 c. grated extra sharp cheddar cheese
cooking spray
1 c. salsa (optional)
1 c. sour cream (optional)

Directions:
Directions:
Heat oven to 200º
Place ingredients between 2 tortillas.
Coat a large skillet with cooking spray and set over medium heat. Toast each quesadilla one at a time on both sides, about 2 min. per side.
