Large Roast, 10-12" around 2-3"thick (several small roasts can be used as substitute)
1 Large Onion (chopped)
½-1 Bell Pepper (chopped)
Flour, for searing and making gravy
Bacon Grease or Oil
Salt and Pepper
Water

Directions:
Directions:
1. Cut roast into hand-sized chunks.
2. Salt and pepper the chunks.
3. Coat with flour and sear on all sides in skillet with hot bacon grease, or hot oil.
3. Place the seared meat into large crock pot.
4. Add 1 full glass of water. Turn crockpot on high.
5. In the remaining grease saute bell pepper and onion. Spoon pepper and onion into crock pot.
6. Prepare gravy; add salt and pepper to remaining oil.
7. Add flour.
8. Brown and stir while adding water until skillet is full.
9. When gravy has thickened, remove from heat and pour over roast in the crock pot.
10. Fill crock pot with more water to 1" below rim.
11. Stir several times and cook on high all day.
