2 - 32 ounce containers chicken broth
1 large tub spinach leaves
1 medium onion, chopped
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried rosemary
1/2 teaspoon dried oregano
2 to 3 dashes of Tobasco
1 - 1/2 cups milk or milk substitute
instant potatoes
Optional: grated cheese and/or croutons

Directions:
Put chicken broth, spinach, chopped onion, minced garlic, salt, pepper, rosemary, oregano and Tobasco into a large pot and boil until spinach is tender - approximately 10 to 15 minutes. Allow to cool and blend in batches until smooth. Return to pot and add milk or milk substitute. Adjust seasonings to taste. Heat until medium-hot and shake in instant potatoes, a little at a time until desired consistency. Whisk after each addition. Top soup with grated cheese and/or croutons (optional).
