1 lb. boneless skinless chicken breast
flour
2 eggs
parsley flakes
oil for frying (about 1/2 cup)
1/2 cup butter
salt
pepper

Directions:
Directions:
Cut chicken breasts into thin slices and pound with meat tenderizer. Crack two eggs into a bowl, whisk and add parsley flakes (about a tbsp.) just to give it color. Sprinkle about a tsp. of salt and pepper into the egg mixture and mix together. Pour flour into another bowl. Dip chicken breasts into the flour first, then the egg mixture. Place the chicken breasts into a pan filled with about a half cup of vegetable oil or oil of your choice. Cook until golden brown on each side and then place on a plate lined with paper towels. Continue the process until all the chicken is cooked. Place completed chicken into a 12 by 9" roasting pan and place pats of butter on top of chicken randomly. Cook for another 20 minutes covered in a 350º oven until the butter is melted.
