Two 10 oz boxes frozen chopped spinach ,2 minced shallots and garlic cloves ,2 tablespoons butter ,2 cups heavy cream ,3 tablespoons parmesan cheese ,1/2 teaspoon kosher salt .1/8 teaspoon each cayenne pepper & nutmeg.

Directions:
Saute shallots and garlic in butter ,stir in heavy cream and parmesan ,salt, nutmeg and cayenne. cook until thickened 6 to 8 min ,add spinach simmer 5 min, stir in the juice of half a lemon.
