2 Cups Celery, chopped fine
1/2 Cup Onion, chopped fine
1 Cup Carrot, diced fine
6 Cup Dried Peas
16 Cups of Water
2 Cups Ham Cubes
2 Bay Leaves
1/2 teaspoon Thyme
Salt and Pepper

Directions:
Directions:
--Wash and sort peas.
--In large pot bring to boil; peas and water.
--Simmer 2-3 minutes.
--Remove from heat; Cover and let Stand 1 Hour!

--Add remaining ingredients; heat to boiling.
--Reduce heat and simmer, covered 2 1/2 to 3 hours or until peas are soft.

--If you prefer it thinner just add more water.
