Oatmeal cookies
1/2 cup shortening
½ cup unsalted butter
1 cup sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla
1 -1/2 cups flour
1 tsp baking soda
1 tsp salt
3 cups quick oats
1 cup pecans, toasted and broken into pieces
1 cup raisins or chopped dates
2/3 cup white chocolate chips
2/3 cup milk chocolate chips
Or you can use bittersweet chocolate or semi-sweet chocolate. Depends on your taste. I find the milder flavored chips allow the oatmeal to come through.

Preheat oven to 350 degrees F. Place pecan halves on unlined cookie sheet and bake until you can smell them. Sprinkle with a little salt. Let cool. Break into pieces with fingers. Don’t chop them fine or you won’t taste them.
Line baking sheet with parchment. Beat shortening, butter and sugars until creamy (make sure and beat until creamy – it affects the texture of the cookie). Add eggs and vanilla. Mix Well. Combine flour, baking soda and salt. Add to shortening mixture; mix well. Stir in oats, nuts, raisins and chocolate chips. (you can add these in whatever amounts you want, try to keep it around 3-4 cups total – more is better, though ) Using rounded tablespoons, roll into balls. Place 2 inches apart on prepared cookie sheet. Flatten with fork. Bake 10 to 12 minutes or until lightly browned. Let stand 1 minute before removing to racks to cool.
