1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup onion, chopped
2 tablespoons butter
1 1/2 quart chicken broth
1 cup beer
1 lb cheddar cheese, grated
2 oz gorgonzola cheese
1/2 cup butter (1 stick)
3/4 cup flour
2 oz bacon, fried and crumbled

Directions:
Directions:
Sautee vegetables in 2 tablespoons butter for 10-12 minutes.
Add broth and beer and bring just to a boil and reduce to simmer.
In a stock pot melt 1 stick of butter and add flour to make a roux.
Strain vegetable/broth mix reserving liquid.
Add 2 cups of the hot liquid to the roux stirring until smooth.
Add in cheeses in a few small batches stirring to melted and silky smooth.
Serve topping with bacon bits and a good crusty bread.

This is a favorite of my wife, Debbie.
We like to use very sharp cheeses...Cabot or Cuba are our favorite brands.
We also like to use a really good gorgonzola and always use more than the recipe calls for, but add depending your own tastes.
