2 lbs baby carrots
3 tablespoons olive oil
3 tablespoons honey
1 teaspoon balsamic vinegar

Directions:
Directions:
Place carrots on a baking sheet and sprinkle with salt and pepper and a drizzle of olive oil.
Roast at 400 degrees for 20 minutes.
mix together tablespoons olive oil, honey and balsamic vinegar and pour over the carrots.
Return to the over for 5-10 more minutes.
