2 leeks sliced thin
10 oz greens frozen or fresh
Sun dried tomatoes dry
Herbs
1-2 Dijon
1 1/2 t. Salt and pepper
1 1/2 c. Grated gruyere or manchego or TJ goat cheese cheddar
1/4 c. Grated parm
2 c almond milk
1 c cream
2 T creme fraiche
10-13 eggs
Olive oil and 1-2 T. Butter

Optional: pancetta or ham or bacon or sausage ground. Mushrooms. Shallots. Sweet peppers

Directions:
Sauté leeks in olive oil and butter til soft. Add seasoning and herbs. Add greens to sauté. Add sun dried tomatoes at end for short while.
Spray oval 3 qt casserole and put veggies in. Put grated cheese on top, reserving small amount for top later
Whisk eggs, add salt and pepper, more herbs if needed. Whisk in cream.
Pour over veggies and cheese in casserole.
Top with remaining gruyere and the parm.
Can hold in refrigerator overnight if needed.
Put on rack in slow cooker. On low for 6-7hours

Can mix the egg mixture in blender to make smoother and fluffier.

Fav combo: leeks, swiss chard, deli ham 10 oz, gruyere and pecorino, sun dried tomatoes
