Coconut Cake with Never Fail Frosting Recipe

Ingredients: Cake ingredients 1 cup butter 2 cups sugar 5 eggs 1 tsp. soda Dash salt 2 3/4 cups cake flour 1 tsp. baking powder 1 cup buttermilk 1 tsp. vanilla extract 1/2 to 3/4 tsp. coconut flavoring 2 recipes Never Fail Frosting 2 cups fresh grated coconut (I have used canned)
Frosting ingredients 1 cup sugar 1/4 tsp. salt 1/2 tsp. cream of tartar 2 unbeaten egg whites 3 tblsps. water 1 tsp. vanilla extract

Directions: Cake Cream butter and sugar until perfectly smooth (about 15 minutes on electric mixer). Add eggs, beating well after each addition. Sift dry ingredients together and add to creamed mixture alternately with buttermilk. Stir in vanilla and coconut flavoring. Bake in 3 or 4 greased and floured 9" round cake pans (number you use depends on whether you like 3 thick layers or 4 thinner ones). Bake at 350º for about 25 minutes or until layers test done. Cool and frost. Sprinkle with coconut.
Frosting Combine all ingredients except vanilla in top of double boiler. Use mixer to stir. Beat briskly for 3 minutes or until frosting is fluffy and holds its shape. Remove and add vanilla. Spread between cake layers. Make second recipe and frost top and sides of stacked layers. Sprinkle with coconut. |
