1 chuck steak, cut into four pieces and pounded with meat tenderizer, sprinkle with Lawrys Seasoning
1 cup Crisco oil
2 cups flour
1 tablespoon salt
1 tablespoon pepper
1/2 teaspoon cayenne pepper
1 teaspoon paprika
2 eggs
1/2 cup milk

In large frying pan heat Crisco over medium heat
Heat oil till drop of water dances (oil must be hot when you put steak in)

Mix flour and spices in freezer bag
Scramble egg and milk

Dip steak into egg bath, then into flour mixture then sit on cutting board to rest for 5 minutes
Put steak in hot oil, wait...till brown... only turn one time, be careful about checking as if you turn too soon breading will come off - patience :) As soon as it is brown on both sides place on paper towels, you do not want to toughen or overcook steak inside.

I use the remaining flour in dipping bag to make gravy:
Pour off oil leaving about 1/4 cup oil, scrape crumbles in pan, pour in about 1/2 cup of flour from the bag, salt and pepper, brown flour and then add milk, a little at a time until you get preferred consistency.
