3 egg yolks
1 stick butter
2 tablespoons lemon juice
dash of cayenne

Directions:
Directions:
Separate eggs, discarding egg whites.
Stir egg yolks briskly with a fork.
Cut stick of butter in 4 pieces
Place 1/2 butter into small saucepan.
Heat slowly over slow heat, stirring with a wooden spoon, until the butter melts.
Add egg yolks, and rest of butter, stirring slowly and constantly with wooden spoon.
Add lemon juice, and stir continuously until sauce thickens.
Sprinkle with dash of cayenne pepper and remove from heat.
Serve promptly.
