Ingredients:  
Summer veggies - size based on how many portions (1 of each whole veggie to 1 person - easily customized)
2 yellow squash cubed
2 zucchini cubed
1 eggplant cubed
handful green beans cut
2-3 cloves fresh garlic diced - I like a lot but do as much as you like
(include any other veggie from your garden that would think would work in this recipe)
6 tomatoes diced
2 tablespoons olive oil
salt and pepper to taste
garlic powder
onion powder
fresh Parmesan cheese
1 pound of any type of noodles you choose, I like thin spaghetti noodles

Directions:
Directions:
Add 2 tablespoons of olive oil to saute/fry pan on med heat
Add all veggies except for tomatoes
Add garlic & onion powder, salt & pepper and fresh garlic
Saute all vegetables until al dente
Add diced tomatoes and let them simmer with all your veggies

Boil noodles and strain

Add veggie mixture to noodles, top with fresh Parmesan cheese, and enjoy!
