1 cup peanut butter/almond butter/sunflower butter
1 egg
2 scoops of vanilla protein (I use Arbonne)
1/4-1/2 cup of selected sugar substitute (I use Pyure; you could use honey (this will change the taste a bit), agave, erythritol, stevia, etc.)
Sugar free chocolate chips (Nestle is a common brand of SF chips and likely can be found at your local store)

Directions:
Directions:
Preheat oven to 350 degrees.
Mix all ingredients together except chocolate chips until smooth; a mixer works best.
Mix in chocolate chips and place a spoonful of batter onto cookie sheet and flatten gently.

Bake at 350 degrees for 8-10 minutes depending on oven. They will be a little soft when coming out and will set the rest of the way during cooling.
