1 can red light kidney beans, drained
2 cups dried white rice
12 oz. Coconut Milk (not water)
30 oz water
2 Stalks Scallion (Green Onions) sliced
2 sprigs Thyme
1 tbs salt.
1 tbs margarine or butter

Directions:
Directions:
Place rice in pot, drain and rinse kidney beans and add to uncooked rice along with chopped onion, thyme, butter, coconut milk, salt, pepper

Bring to a boil and then turn down to simmer until cooked. Takes a little longer than just rice to soak up the moisture. This is not a dry rice when done, it is a little creamier.
