2 Cornish Game hens (1/2 lb each)
1 cup black cherry spreadable fruit or preserves
3 tablespoon port, red wine or grape juice
3/4 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
Stove Top stuffing of choice, I use Pork

Directions:
Directions:
Saute 1/2 onion and one rib of celery with 3 tbs butter, add Stove Top stuffing.
Preheat oven to 400ºF. Stuff hens, if desired, place on rack set in roasting pan.
Roast hens 20 minutes
Meanwhile, press spreadable fruit or preserves through strainer, discarding any solids. In pot combine strained fruit with port, sage, salt, pepper and garlic powder.
Cook over medium-high heat, stirring occasionally, until mixture is just bubbling, about 3 minutes.
Reduce heat to low; cook until mixture melts and thins; 2 minutes. Remove from heat; set aside.
Reduce oven temperature to 350ºF, brush hens with some of the fruit mixture two or three times until meat thermometer inserted into thickest part of thigh registers 180ºF or juices run clear when meat is pierced with fork, 45 minutes. Bring out of oven, let rest five minutes and brush one more time. I use moms cherry preserves.Serve
