1 lb sausage, cooked
2 c shredded cheddar cheese, divided
1 can,10 3/4 oz, cream of chicken soup
2 c. sour cream
1 c chopped onion
1 c chopped red pepper
1/4 t salt
1/8 t pepper
1 pkg, 30 oz, frozen hash brown potatoes, shredded

Directions:
Directions:
Preheat over to 350º. Spray 13 x 9 inch baking dish with cooking spray. Heat large skillet over medium-high heat. Add sausage. Cook 6 to 7 minutes until crumbled and browned, stirring occasionally.
Remove sausage and drain well.

Stir together 1 1/2 c cheese, soup, sour cream, sausage, onion, pepper, salt and pepper. In very large bowl, fold in hash brown potatoes until well combined. Spread the hash brown mixture over bottom of baking dish. Bake 50 minutes. Top with remaining 1/2 c cheese. Bake another 10 minutes or until casserole is golden brown. Let stand 5 minutes.

Make sure the bowl you use is large enough to fold in the hash browns. Otherwise, it makes it difficult to mix it well.
