Ingredients: Batter: 1stick butter, softened 2 cups sugar 3 eggs 3 cups self-raising flour 1 cup milk 1 teaspoon vanilla
Icing: 1 stick butter, softened 2 cups confectioner's sugar 4 tablespoons cocoa 6 tablespoons prepared coffee 1 teaspoon vanilla

Directions:For Batter: Cream butter & sugar together Add eggs and mix Add flour a little at a time alternating with milk Add vanilla Pour into 2 greased and floured round cake pans Bake at 350 degrees until toothpick comes out clean (approx. 25 mins)
For Icing: Cream butter and confectioner's sugar together until smooth Add in cocoa, vanilla and coffee If icing is too thick, add more coffee or a few drops of milk. If too thing, add more confectioner's sugar.
Our family likes double icing!! The cake has a denser, more flavorful texture than box cake mixes. |

Notes: We know Grandma Brightwell started making this cake as early as 1958 when my mom joined the family. I grew up with her making this cake for every holiday and special occasions that often included our Grandparents Stevens and other extended family. Grandma's Brightwell and Stevens enjoyed each others company. The picture above is of them in Lancaster during one of the many Sunday trips our family enjoyed!
