5 lbs russet potatoes, peeled and cut into bite size pieces (but not too small or they will cook away)
8 hard boiled eggs
1 large diced vidalia onion
4 tablespoons sweet pickle relish or sweet gherkins pickles
3 ribs of celery, diced
salt and pepper to taste

Dressing: Combine and taste
2 cups Hellmans mayonnaise
1/3 cup apple cider vinegar
2/3 cup sugar
1 teaspoon Dijon or brown mustard

1. Cut potatoes into bite size pieces, cover with water, salt, bring to hard boil and let hard boil for 5-7 minutes
2. Boil eggs and prepare dressing (mayonnaise, vinegar, sugar, mustard) while waiting for potatoes to cook
3. Drain potatoes, combine potatoes with vegetables, dressing and eggs while hot and toss gently, taste for salt and pepper

For years I made these for all family functions! I only use Russet potatoes, I always dress them hot, after they cool I refrigerate. Enjoy.
