2 pounds beef top round, roast or steak
1 medium onion
garlic clove minced finely
beef broth or water to cover
oil for browning
mushrooms 1 pound sliced thin
flour 2 TBS
Salt and pepper to taste ( I use apple wood smoked sea salt for added flavor)

Directions:
Trim the meat of visible fat and cut into 1/2 inch cubes. Pat dry and brown in small batches in a cast iron pot or large fry pan. When the meat is all browned add onion to the pot and cook until the onion start to brown. Add the garlic clove and cook just until fragrant about 30 seconds. Place the meat back in the pot add water or beef broth to just barely cover the meat and cook covered for 1 1/2 hours or until the meat is tender. Larger cubes of meat will take longer. Remove the cover and add the mushrooms. Continue to cook with the cover off to allow the broth to evaporate until reduced by 1/2 original amount. Remove 1/2 cup of the broth and allow to cool slightly and add flout to make a paste. Add this paste back in to the broth in the pot and stir to make gravy. Add salt and pepper to taste. Serve over mashed potatoes, rice or your favorite starch.
