6c.mixed raisins( Thompson, sultana)
1/2c. Glace pineapple
1 c. Glace cherries
3/4c. mixed fruit and peel
1 1/2 c.cut dates
1/2 lemon rind and juice
1/4 c. dark jelly ( grape or black currant)
1/2 tsp. vanilla
1/2 tsp. almond flavouring
1/4c. strong coffee
Mix together, let stand overnight.
Cream 1c. butter
1 1/2 c. brown sugar
4 eggs
2 1/2 c. all purpose flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. baking soda
1/4 c. sour cream


Directions:

Line 2 large loaf pans with light cardboard, put waxed paper over it.
Mix about 1/2 the flour in with the fruit to prevent floating fruit.
Add spices to remaining flour,and mix into batter with sour cream.
Fold fruit into batter, it will be stiff.
Put into loaf pans
Bake at 275' for about 2-3 hours.
Can make smaller cakes if desired, cut baking time accordingly.
