Ingredients: 1-1/2 cups whole-wheat pastry flour or all-purpose white flour 1 tablespoon sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 cup milk 2 large eggs 2 tablespoons melted unsalted butter 1/2 teaspoon vanilla extract

Directions:Heat a large skillet or griddle over medium heat. Whisk together the dry ingredients in a large bowl. Combine the liquid ingredients in another bowl; beat with hand-held mixer, whisk or immersion blender. Mix the liquid ingredients quickly into the dry ingredients. Pour a little oil in the skillet and spread with a paper towel and continue to do so between batches). Spoon about 1/4 cup batter per pancake. Cook 2-3 minutes, until bubbles appear at surface, check underside to make sure it has browned. Slide spatula under pancake and turn over. Cook until browned on other side. Adjust heat as needed.
VARIATIONS:
APPLE PANCAKES: Add 1 cup chopped apple
BANANA PANCAKES: Add 1 cup chopped up banana.
BLUEBERRY PANCAKES: Add i cup fresh or thawed frozen blueberries.
PEANUT BUTTER PANCAKES: Add peanut butter to wet ingredients, then proceed with pancake recipe.
STRAWBERRY PANCAKES: Add 1 cup thinly sliced strawberries. |
