2 eggs
1 teaspoon water
Salt and pepper to taste
1 teaspoon unsalted butter
1-2 ounces cheese (Jack or Cheddar), grated or sliced

Directions:
Directions:
Heat a small heavy skillet over medium heat. Whisk together the eggs, water, salt and pepper to taste. Once the skillet is hot, add the butter. Once the butter has melted and starts to sizzle, pour in the egg. Use a small spatula to lift up the cooked egg along the edges, tipping the skillet, allowing the uncooked egg to run underneath. Once most of the egg has turned solid, flip the omelet over, put the cheese on one half and fold over. Let it cook on that side about a minute, then turn and cook the other side until the cheese melts, about another minute.
