1 quart milk
1/2 c. white rice
2 T. butter
4 T. sugar
2 eggs
1 tsp. vanilla
dash of salt

Directions:
Directions:
Place all ingredients except eggs and vanilla, in the top of a double boiler and stir to mix. Set over boiling water (bottom of double boiler) and let cook one hour, stirring occasionally.

Beat the two eggs, then stir a little egg into a 1/2 c. of the hot pudding, then add that to the main pot, stirring constantly. Add 1 tsp. vanilla and mix well. Pour into a bowl, sprinkle with cinnamon (optional) and chill.
