Kale torn in small pieces, cherry tomatoes cut in half, cucumbers cut in chunks, marinated red onions, black wrinkled olives, pomegranate seeds, sliced snow peas, Lisa’s salad dressing

For the Pickled Red Onion:
1 red onion, 1 cup unseasoned rice wine vinegar, 1 cup water, ½ tsp salt, ¼ tsp black peppercorns, ¼ tsp fennel seeds, 1 bay leaf, 1 sprig fresh thyme (or dried otherwise). Cut in half or quarter if making a smaller salad.

For the pickled onions:
Peel and julienne red onion and set aside in a medium bowl. In a small saucepan, bring rice wine vinegar and water to a boil. Add the salt, peppercorns, fennel seeds, bay leaf, and thyme; continue boiling for another 5 minutes. Pour mixture over sliced onion while hot and let sit for one hour.

Layer all the vegetables with the pickled onions on top. It’s very beautiful. Toss with dressing when ready to eat.
